Italians eagerly await the mushroom season, going out early to forage in the “secret” woods for “the flowers of autumn”. Mushroom gathering requires skill and respect for the environment, in order to select and  preserve the most flavoursome varieties: Porcini or Cep, Pied de Mouton, Chanterelles, Girolles, Black Trumpet
